
Ng Chee Leong
This early interest led to a Diploma in Culinary Skills at SHATEC (Singapore Hotel Association Training and Education Centre) in 1998. In 2001, he was appointed Commis Chef at The Ritz-Carlton, Millenia Singapore, where he began to refine his pastry techniques under the mentorship of seasoned chefs. His desire for mastery later took him to prestigious institutions including École Gastronomique Bellouet Conseil and Olivier Bajard École Internationale De Pâtisserie, where he honed his skills in French pastry traditions.
Chef Chee Leong's expertise has been recognised on the international stage, representing Singapore at numerous esteemed pastry competitions. Highlights include the World Gelato Cup (2020 - Finals), Asia Gelato Cup (2018 - Overall Champion), Mondial Des Arts Sucrés (2014), Coupe du Monde de la Pâtisserie, World Pastry Cup (2009), International Pâtisserie Grand Prix (2009) and Asia Pastry Cup (2008 - Overall Champion and Best Chocolate Cake)
Since joining The St. Regis Singapore in 2014, Chef Chee Leong has continued to create exquisite pastries that reflect artistry and innovation, with each creation a handcrafted expression of his culinary philosophy. Outside the kitchen, he continues to inspire the next generation of chefs through mentorship at SHATEC - his alma mater, and received a Mentoring Excellence Award in 2024 for his contributions.
